Hello, my darling friends!
I hope you are healthy, sane, and staying entertained during this quarantine.
What a strange few weeks it has been. I find that when I focus on the gifts, the
bright spots, and the silver linings this pandemic has brought to me, I stay
positive and hopeful. What we focus on expands, right? So here are a few
things I am grateful for
- I have somewhere to go every day—our granola kitchen—to do what I love! Tammi and I are not only busy baking, bagging and shipping granola, but we are also experimenting every day with new flavors, so stay tuned!
- I have all my birdies in the nest (they are 20, 18, and 14), and we have eaten dinner together every night now for over a month. That is something that only happens over holidays and will probably never happen again, so I am savoring every minute of it!
- I have found creative ways to exercise at home, and it’s super convenient!
- I have a beautiful new appreciation for my friendships. My friends fill me with life, and I can’t wait to see them and hug them.
- Absence makes the heart grow fonder. I can’t wait to go to a party, a concert, a restaurant, plan a trip…these may be far off, but it makes me excited to anticipate them!
For me, gratitude interrupts anxiety, so I choose to focus on the good. I am so
grateful for my loyal customers, so THANK YOU for supporting our small
business. Along with our followers and supporters, here are some other things I
am loving this month…
1. KITCHEN APPLIANCE—The Ninja Foodi Grill
Seriously, you guys…I have never loved an appliance more than this one. I use it almost every single night. It’s an indoor grill and an air fryer all in one, and it is a GAME CHANGER. You can grill steaks, burgers, salmon, chicken—literally anything you would grill outside or anything you would pan fry on your cooktop (which makes a splattery, greasy mess) you can cook in this contraption. It sits on your countertop, you place your food on the grill plate, close the lid, set the timer, and you have perfectly cooked food in minutes without a mess in your kitchen and without having to go outside! All the parts are easy to clean and go in the dishwasher. It’s fantastic. If you love the grill marks on your meat, you will get those, too! The air fryer makes perfect chicken wings, French fries, roasted potatoes, and so much more.

2. BEVERAGE—Califia Unsweetened Keto Coffee
I love coffee as a morning ritual—the warmth, the aroma, the life it gives…but I discovered a cold brew grab-and-go coffee the other day at Natural Grocers, and I am in love. I have been adding fat and protein to my coffee for a while because it fuels my workouts and keeps me full until lunch, so this little gem fits the bill. It has plant-based protein (7g per bottle), MCT oil, and this cold brew is mellowed out with almond milk and coconut cream. It is 3g net carbs per bottle, and you can add a couple drops of liquid stevia if you like it a little bit sweet. Califia Farms does it again!
3. BEAUTY—The All Bright C Serum by Beautycounter
Topical vitamin C is a powerful antioxidant for the skin, and it has made its way into all kinds of potions and lotions. Beautycounter, a beauty company with a mission of safety and transparency, has created their first C serum, and you guys, it is fabulous. Its goal is to brighten the complexion, even skin tone and protect, and it really delivers. 4. RECIPE---Keto Energy Bites
Another way to enjoy our granola! These energy bites are tremendous, full of
healthy fat and protein, and they make a convenient snack-on-the-go, a great
lunchbox addition, or a quick breakfast. They are rich and decadent, creamy
but have some crunchy texture…just trust me! You will love them!
Keto Peanut Butter Energy Bites
6 ounces peanut butter Delish Girls Keto granola
16g vanilla or chocolate collagen (we like Perfect Keto)
11g shredded, unsweetened coconut
17g coconut flour
¼ t. salt
12g erythritol (we like Swerve)
11g cacao nibs
½ cup peanut butter
1 t. water (or more if necessary)
Pulse the granola in a food processor until you have crumbs. Add the rest of the
dry ingredients to the food processor and pulse to combine. Pour the dry mixture
into a medium-sized mixing bowl and add the peanut butter and water. Mixture
may be crumbly, but should hold together well when rolled into a ball. If it feels
too dry, add more water by the ½ teaspoon until it is easier to roll into balls.
Place balls on a parchment-lined cookie sheet and place in the fridge until firm.
Store in a glass container or a sealable bag in the fridge.

I can nerd out for DAYS on health and nutrition podcasts, and if you are into that stuff, too, The Genius Life is binge-worthy road trip content that is interesting and inspiring. Max Lugavere is a health and science journalist, TV personality and nutrition expert who interviews leading experts in the health and nutrition space. His interest in the ketogenic diet began when his mother was diagnosed with dementia. There are several episodes on eating keto to protect the brain from cognitive decline. Max is super smart, and his interviews are fun and informative. Favorite episodes: #67 and #85

Ok, How I Built This is another podcast that I LOVE with all my heart and soul. It’s about entrepreneurs and their journeys from an idea to a full-blown successful company. It’s inspiring to hear the stories about people who worked so hard to build a big business, the ups and downs of the process, and the success as a result of tenacity, faith, luck, brains, blood, sweat and tears!
