Chia seeds are little nutritional powerhouses! They were used as a source of fuel or energy in ancient Mayan civilizations, and chia is actually the ancient Mayan word for “strength”. They are loaded with fiber, protein, antioxidants, and omega-3 fats, and they contain important minerals for bone health, like calcium, phosphorus and magnesium. Chia seeds swell up when they are combined with liquid—they can actually hold up to 10 times their weight in water, so they may increase the feeling of fullness. They are relatively low in calories, about 60 calories per tablespoon, and all the carbohydrates in these little gems are fiber! Healthy fat, protein, and zero net carbs? Hello, perfect Keto-friendly ingredient! Mixed with full-fat coconut milk, sweetened with a touch of liquid stevia, enhanced with the flavoring of your choice, these little seeds do their magic and create a creamy, dreamy pudding for a guilt-free indulgence.

1 13-oz can of full-fat coconut milk. Refrigerate the can overnight and just use the part that hardens. (We find this one hardens the best) Discard the water in the can or use it for another purpose.
1.5 cups unsweetened vanilla almond milk
14 drops vanilla liquid stevia drops
¼ t. vanilla extract
¼ t. almond extract
¼ cup chia seeds
Whisk or blend together all the ingredients EXCEPT the chia seeds. Pour into four small containers. Add 1 Tablespoon of chia seeds to each container, put the lid on, and shake well. I like to stir each container after 5 minutes, wait five minutes, and stir again. If you don’t, the chia seeds might collect at the bottom. The stirring helps the seeds to become suspended in the liquid while they swell. Place containers in the fridge for 2-4 hours or overnight. Enjoy in 3-5 days, and of course, top with Delish Girls Keto Granola!
