Ladies and Gentlemen, welcome to our favorite Keto soup recipe, which is sure to be your new fave, too. Get out the crockpot, folks, because it will do all the work, and you won’t have to do much but cook the beef and dump it all in! This is a creamy, hearty soup that is satisfying, a little spicy, delicious, and low carb. We love to add Whisps to the top for a little crunch!
2 pounds grass-fed ground beef
½ cup diced onion
2 cloves garlic, crushed
2 cans diced tomatoes with green chilies (we like this brand)
1 8-oz container Kite Hill jalapeno cream cheese alternative*
2 T. taco seasoning
Brown ground beef in a large sauté pan with the garlic and onions until beef is completely cooked. Add beef to crock pot. In a blender, mix together the broth, the Kite Hill, and the taco seasoning until smooth. Pour into crock pot over beef mixture. Add tomatoes and give it a stir. Close the lid, and cook on low for 4 hours.
*want to take down the spiciness a couple notches? Add plain cream cheese instead!
